Mason Jar - Greek Salad

We had company this weekend so I didn't get to dabble in a new recipe.  Greek salad is one of my favs for the summer, it's light and filling.

I chose the wide mouth Kerr jars from Target over the Ball jars because they are more uniform in size and if you decided to eat straight from the jar you wouldn't get dressing hands!

You can also see in my pic that there are two salads layered differently.

Ingredients:
Kalmata Olives and Juice
Thin sliced red onion
Diced cucumber
Feta cheese
Chicken
Romaine lettuce
Greek Feta Dressing from Trader Joes OR Newmans Greek

There's no set amount for each ingredient, layer to taste.  I will say though that the onions can get a little strong.

Left Salad
Hubby doesn't like olives of any kind.  He also works from home so I left his dressing out so he could choose how much or little to use.

Right Salad
For me, the more Greek the better!  I chopped up 6 olives, a little onion, 1.5 tbsp olive juice and 2 tbsp feta dressing for the bottom of my jar.  Followed by chicken, feta, cucumber and lettuce.

What I'm trying to say here is do what works for your family.  There's no wrong way here.

Mason Jar - Dijon & Fig Glaze Salad

My latest fascination is mason jars. They are charming, country, space efficient and eco friendly. As you saw in my last post I've gone pin crazy on smoothie recipes and salads. I spent my Sunday testing new smoothie recipes and making mason jar salads.

I've also been looking into the differences between paleo and primal eating.  I am a lover of cheese, primal allows dairy.  I really shouldn't be doing dairy because of my auto immune deficiencies but as I'm dipping my toes back into the paleo pool I'm not going to cut it just yet, starting back with cutting grain and processed sugars.  You'll see some cheese etc in my recipes so change to fit your needs.

Dijon Fig Pear Champagne Glaze Salad

This glaze recipe was originally found on Trader Joes website.  I never cook a whole chicken because its just the 2 of us plus I prefer boneless skinless breasts, so I modified this slightly to fit my taste/need.  Usually I marinate and grill my chicken but in this case I'm using the glaze as my salad dressing.  Hubby kindly pre grilled a bunch of chicken for me so I could chop and go.
4 tbsp champagne pear Gorgonzola dressing
1 tbsp Dijon mustard
1 tbsp fig butter
Stir in a dish and microwave for 30 seconds to meld all the flavors.
If your grilling chicken go ahead and start marinating, leave a little on the side for dipping.  If your making your salad wait for it to cool before placing in the jar.
I'm no expert here but I was told its all in how you layer your jars.  You want dressing on the bottom (be careful not to splash up on the sides) followed by meat and/or items that can marinate in dressing without falling apart, then comes your hearty veggies like cucumber, bell pepper, mushroom etc. and finally leafy greens

In my salad I chose glaze, chicken, cherries, candied walnuts, cucumber and romaine.

What do you like in your salads?

Smooth E Operator

I know its been few and far between that I've been able to post anything.  The short story of it all is that we're short staffed at my work and I've been working 13 hour days (that's right people, I'm gone from 5am to 7pm)  The sad side effect is that I've been eating out for all my meals because I leave so early and come home so late I'm to exhausted to prepare anything.....and now I've gained back all the weight I'd lost plus some more.  BOO.

Upside, Hubby bought me a Ipad so in my down time at work I've been on Pinterest, pin pin pining away paleo recipes.  By some miracle I had 6 days off in a row and decided to actually try some of these recipes and really try to get back on track with paleo eating.

These are my trusty tools:  IPAD and Blender.  I also picked up this snazzy mortar and pestle at Costco, a few of these recipes called for ground flax seed.  I also heard that ground chia seed helps thicken smoothies and is amazing in Omega 3.

This did take quite a while to cut up all the fruit and read each recipe so I don't have pictures of them all.  Instead I'm posting the pretty pictures from the blogs they came from, followed by my modified recipe, when you click on the picture it will link you to the original recipe.

Why modified you ask?  I'm allergic to banana (the base of most smoothies), I had to use the fruit on hand and some had to be paleo-fied.

Strawberry Sunbutter & Spinach

  • 2 cups frozen strawberries
  • 2 large handful spinach leaves
  • 3 Tbsp sunbutter
  • 1cup unsweetened almond milk
  • 1.5 Tbsp maple syrup
  • 1Tbsp ground flax seed
  • 2 tsp apple cider vinegar
  • 1/4 tsp cinnamon
I doubled the original recipe and it filled 2 mason jars perfectly.   This smoothie is pretty delicious, especially if your a peanut butter lover like my hubby is.  Sun butter is the perfect sub, Trader Joe's has a pretty yummy jar for under $5.

Mango Orange

http://oursavorylife.com/a-super-hydrating-paleo-smoothie-recipe/

  • 1 cup frozen mango's
  • 1 orange, peeled
  • 2 apricots
  • 1 cup almond milk
  • 1/2 cup 100% pure coconut milk
  • Chia Seed and Ground Flax optional

  • Bright citrus flavor, the apricot didn't blend down to well though.  If you don't like chunky smoothies I would leave it out.

    Pina Colada

    http://www.vegalicious.org/2011/02/04/pina-colada-smoothie/
    • 2 cups pineapple (I used frozen from Trader Joe's)
    • 1 cup mango
    • 1 can coconut milk
    • 1 cup pineapple juice
    • Chia Seed and Ground Flax optional
This was my favorite, the only down side was it was a little to acidic drinking it all at once, but that could just be me. I still have one more jar of this so I'm going to definitely try again.

At this point I was feeling pretty confident in my smoothie making ability's and decided to wing it.  I had purchased some pre cooked beets at Costco, super healthy....super disgusting.  Picture me, dumping 3 juicy beets in the blender, dancing in the kitchen singing "turn the beet around, blah blah blah, the passion".  It didn't matter how much fruit I put in the blender it was not going to cover that taste.  I even dumped half out and tried to salvage it.  No Bueno.

So we scrapped that batch and moved on.

    Very Berrylicious

    http://www.thegraciouspantry.com/clean-eating-super-berry-smoothie/

  • 1 cup blueberries
  • 1 cup strawberries
  • 1 cup blackberries
  • 2 big hand fulls of spinach
  • 1 tablespoon chia seeds (I added ground flax too)
  • 1 cup unsweetened almond milk

  • Another fav of the Hubby's, he loves anything berry and definitely better than beets!

Here are my little beauties in the freezer, each batch filled 2 jars. My mom bought me blue ball jars at Target.  I also bought larger jars to make salads in more on that to come and more smoothie recipes too.  I found some with avocado base, that should be interesting.

    Meatball Soup

It's been a while since I've posted and this little ditty is past due.  I started this one way back in March but didnt want to over load on recipes.

Let me preface that I've never made a meatball.  Truthfully I hardly ever eat them, unless they come in the form of my mom's albondigas (mexican meatball soup).  So this was a huge step for me to make and eat meatballs.

First off I found this recipe for "italian wedding soup" on theFoodee.com (you have to click on the picture to get to the blog it originated from)  I got all my ingredients between Sprouts and Trader Joes.
    • Ground beef pork (1 pound)
    • Basil, dried (1 teaspoon)
    • Onion powder (1/2 teaspoon)
    • Garlic powder (1/2 teaspoon)
    • Carrots (2)
    • Celery
    • Onion
    • Garlic (1 clove)
    • Chicken broth (6 cups)
    • Tomato sauce
    • Cauliflower (1 cup)
    • Frozen chopped spinach (2 cups)
This Mirepoix mix from Trader Joes was a great little time saver for my soup base.  In the pot it went with garlic, spinach, chicken broth and tomato sauce.
My first soup faux pas was that I grabbed my ground pork instead of ground beef out of the freezer.  Oops.
This recipe also called for "ricing" cauliflower.  Let me just tell you, with out a food processor this makes a huge mess.  So I opted out of that and went for almond meal in lieu of bread crumbs and a good old fashion egg to combine my herbs and meat with.
Under cooking pork really freaks me out, so I made sure they were nice and brown before plopping them into the broth.

With garlic salt and ground pepper to taste, I was pleasently surprised with my paleo creation.  Next time I think I'll through in some stewed tomatos.
    Enjoy!

    Sweet Potato Hash

Things have been mainly quiet on the home front...just plugging away an bags and boxes.  I'm pretty happy to share that I got all my purses put up on a shelf and all the boxes in the kitchen and den cease to exist.  We've also made major headway in the curtain department.  Maybe next week I'll have some after photos for everyone.

Paleo is also going well.  My hours have just been slipping away between work, food prep and house stuff so I haven't had time for the o' bloggeroo but I have been keeping a photo log in my phone.

Hubby made some amazing sweet potato hash, super simple and super yummy.  I'm not sure where he came up with this little ditty but we've made it a couple times so I pretty much have it memorized.
You start out by chopping half a red onion, one apple, one orange and shredding about 2 cups of sweet potato.  My poor little grater is now stained and strained!  I highly suggest getting a food processer with a grater if your looking for paleo friendly tools.  I'll be getting one next month.
Secondly heat your non stick skillet with coconut oil and saute the onion and apple till translucent.
Then add in your sweet potato and oranges.  I squeezed my oranges just a little to get some of the juice going in the pan.  You'll continue to stir and saute till the hash cooks down.  Then finish it off with a Tbsp of honey and a tsp of garlic salt.
We had this as a side to Spicy mustard pork and to steak, I'm sure it would also be great for breakfast.
    Enjoy!

    Paleo at Sprouts

One of my favorite things about the Foodee blog is that you can save recipes you like and it will make a grocery list for you.  I picked 11 meals that I wanted to try along with some basic needs I've read about like Coconut Oil, Aminos and Milk.

After searching for the local Whole Foods store I found the closest one to me was about 40 mins away.  No Bueno.  Then I remembered there was a Sprouts on my way home from work.

I'd only gone to Sprouts once before, honestly its pretty daunting walking in.  Its not set up like a typical grocery store and I spent 2 hours there!  Slowly strolling up each aisle hunting down my items and reading labels.  You would not believe how many things they sneak sugar and soy into.  It took me a long time to figure out which was the "right" kind of almond and coconut milk to drink.  Still have to do a little research on brands.
Here are some photos of my "Haul"
Coconut Oil, Milk, Aminos and Water.  Chicken Stock. Almond Milk.  Stewed Tomatos.  Apple Sause (not shown) and Apple Cider Vinegar.  I'm going to try my hand at making my own Mayo!

Spaghetti Squash, Strawberries, Cauliflower, Onion, Shallot, Cranberry, Flaxseed, Almond Meal
and that funny thing on the right is a Jicama.  Apparently you can treat it like a potato.
Green Stuff: Basil, Mint, Cucumber, Celery, Kale, Chard, Scallions
I felt very silly standing infront of the greens totally stumped at what I was actually looking at, found a very nice man who told me which was chard and kale.  He even brought me a Ad and coupons.

Googled how to prepare chard to learn how to cut the beast apart.
There was SO much prep work for veggies.
Hubby made some perfect steaks for dinner.

Last but not least I tried a recipe I saw on facebook for a green drink.
(Using their pix, my shaker cup was not as pretty)

    Fresh Start

    Happy Monday!

The move is officially over.  Most of the boxes are un packed. I'm mostly over being sick and feeling the full effects of being robbed an hour of sleep (thanks day light savings)

I've been tip toeing around the topic of Paleo eating, reading the Paleo diet book and blog after blog of information.

These are my favs so far:
    Whole9
    The Foodee Project
    Chowstalker
    PaleOMG
    Paleo Plan
    Meanest Momma

Whole9 writers have a book called It Starts with Food.  Several sites recommend it so I looked it up on amazon and BAM bought it for my iphone Kindle app.  You know how they show you other's purchased xx also?  The cookbook Well Fed popped up, also good reviews, so I purchased that too.  I never thought I'd read a cook book cover to cover, but the style of writing was so real and invigorating it made me want to start right away and that's what I did.

The author talks about doing a weekly cook up, where you prepare everything you would need for the week so all your meals take less than 20 mins to make.  I really didnt have a meal plan for the entire week so I just prepared for Monday.

Whats for Breakfast:  Egg scramble with shrimp, bell pepper and onion.  Topped with Avocado.  Grapes for a snack.

Whats for Lunch: Seared Mahi and Dill, Green Beans, Cherry Tomatos.  Blueberries and Almonds for snack.
Later on tonight we'll have Steak and Asperagus for dinner.  Although I havent finished reading all my books I know this is what I want to do.  I cant believe that no one told me about this sooner.  For the next month I'm going to follow the Whole30 plan.  30 days of strictly paleo eating.  What some of you dont know is that I also suffer from Fibromyalgia and Psoriasis, both auto immune disorders.  I'm hoping by eating clean foods that I'll be able to reverse my health to something close to normal.

    Paleo Stuffed Peppers

I haven't full on started my paleo journey but I did decide to give it a whirl for one dinner.  I was totally winging it and thinking this is either going to turn out great or get me a spot on Worst Cooks in America.   Using all ingredients from Trader Joe's, I started out with browning ground turkey with sea salt, TJ "every day seasoning" and onion.  Then I was thinking what goes in a meatball?  And threw in an Egg.  (Didn't think it through and the egg scrambled.)  Then topped it off with TJ Roasted Garlic spaghetti sauce.  Best sauce I've ever had.
While that was sizzling...I cut and cored my bell peppers.
I really think peppers are pretty.
After making sure they were nice and even, they got stuffed and topped with Feta.  Dairy isn't really allowed on paleo, they suggest you do not eat it for 30 days and slowly add it back in your diet to determine your tolerance. (when I made these I had not gotten to the part in the book that said dairy was a no-no.)
The finished product was pretty darn good if I do say so myself....and I do.

I also tried my hand at a paleo desert.  Chia Seeds are super good for you, high in fiber and swell in liquid.  On the back of the bag it suggested soaking them in coconut or almond milk for a pudding effect.
In my mind it was going to be like rice pudding or tapioca...in reality it was an epic fail.  First off, I'm pretty sure my coconut milk had gone bad.  It didn't taste horrible, but it didn't taste right either.  That's when I noticed on the box "use within 7-10 days of opening".  I had no clue when I opened it, but my gut told me it was around 14 days.  (Mental Note: Mark the date on the next box)  Secondly, I'm not sure if I didn't let the seeds soak long enough or they need to soak in room temperature but they remained sort of crunchy.  I'll have to give it another try eventually.

Lastly, a cute pic of my pup after a long day of playing.  He is my world...you know besides my Hubby =)

    Confetti Spaghetti

I know I haven't been keeping up with tips so I thought it would be nice to share a recipe.  I made this last night for dinner.

    1. Choose any pasta of your liking and boil.  (here I used Trader Joe's Garlic Basil Linguine)

    2. Grate 1 1/2- 2 cups each of carrots and zucchini.  Saute in a pan with salt, lemon pepper seasoning and 1 fresh lemon.  Start with half the lemon and add juice to taste.

    3. Add confetti veggie mix to pasta with olive oil drizzle.  May need more salt and lemon pepper to taste.

I serve my pasta with baked Lemon Pepper Chicken and chopped zucchini.  Would also be great with shrimp.

    Enjoy!

    Lean Mean 2013

So I didn't quite make the 13lb benchmark by January.  I missed the last 3 weigh ins.  According to my scale I was up and down over the 3 weeks; when I went for my official weigh in yesterday I was down .2 lbs.  At least its not a gain and I can still maintain my all loss book.  I've been on "break" making brownies and Mexican food (Why not go for bust since I wasn't counting anyway) but now its time to get back on the horse.

I've kept my promise to myself and I joined the community center gym.  I also went ahead and purchased Active Link to track my soon to be activity points.  I'm still trying to figure out how to use it but I'm excited about the tool and hoping it will give me more incentive.

My team leader was nice in saying "don't worry about the past, that's last years weight."
Very true, I'm ready for the boost.  I'd love to say I'm going to lose 2 lbs a week and be at my goal for next year but realistically I'm going to put it out there to shoot for a 1lb a week knowing there will be ups and downs.  That will put me at a hopeful loss of 50 lbs!

So here's some other goings on for start of 2013.
As mentioned before we are moving!  In 5 weeks and counting...Officially February 16.  This has caused me some major stress in the past month but now things are settling down.  Hubby officially got a new job.  As of today his start date is January 21, but he's trying to get it bumped up to the 14th.  Seeing they want him on a conference call that day, I think it's fair the payroll clock starts then.  He'll be flying to Canada on the 21st and then to Atlanta to meet his new counter part on the 31st.

There was a lot of back and forth on the flight schedule but I'm happy to say He'll be able to go to the first fertility apt we have scheduled for January 24.

Now I've read the starter packet back and forth and still have no clue what we're going to discuss in that first appointment.  But what I did find out is that we have to meet with a financial planner before we start any kind of treatment plan.  I thought this was kind of funny because don't you need to know what your planning to do before you know how much its going to cost?

The house we are moving into, I believe was built in the 70's.  Now my parents did some remodeling during the 20 years we lived there, but in the past 8 years the place has been screaming for a face lift.  At bare minimum we need to paint and carpet the place.  Gold, green and burgundy just AREN'T my colors!  There is also a leak in the master bath the feeds into a wall that will need to be taken care of ASAP so I've spent WAY more time in hardware stores than I'd ever imagine.  Why do I bring all this up?  A dirty little word called Finance, it's looming over my head. We don't have the up front cash to fix the house and I refuse to borrow it from the bank of Mom, so we'll have to finance that on top of what I'd already figured we'd have to finance for the medical stuff.

Yes there are a lot of goings on in my head.  On the funner side,  I have my annual scrapper bowl coming up February 9 and I'm hosting book club in March.  I've also added a knitting circle to my craft menagerie.  Sprinkle in a few photo shoots and we've got a full spring line up.

I just want to say I appreciate all my "cheer-readers" out there.  It mean's alot that you keep up with my silly stories and keep me encouraged to keep on my way.

    Pina Coladas

    Today's weigh in:  -1.4
    Grand total: 9.2

They rolled out a new plan today that I'm not sure I like yet. Could be that I'm just not a fan of change.  The points are the same thank goodness because I'm used to them and they are working for me.  New thing called Spaces and Routines.  The reason why I'm not crazy about them is they are things I'm already doing.  Routines is very similar to 21 day challenges and Spaces is just controlling yourself in trigger environments.  I'm sure they will be helpful to most people just starting out.  We'll see how I feel in a few weeks.

    Tips from the week:
    1. I've never actually used Simply Filling part of the program until this past weekend and I did it subconsciously.  We went to a anniversary party which was pretty impossible to count the food.  So I filled my plate with "safe" food.  Salad, Veggies, a small portion of meat, yams.  I kept sipping on water and avoided the dessert table. Yea Me!

    2. Last Wednesday I had my hair done by my wonderful sister.  We had some nice conversations and I told her about doing WW.  It was nice to have her support me because when we went to dinner afterward she encouraged me to split a meal with her.  I'm grateful because those veggies were certainly laced with butter.
So even though on these 2 instances I wasn't exactly sure what the points were I still counted and even over estimated a little for just in case.

    3. My friend and WW buddy turned me on to La Croix coconut seltzer water at Target.  The flavor is great coconut/vanilla, so I googled the name and recipe.  I got the idea to make a skinny Pina Colada!  By using a cup of frozen pineapple bits from trader joes, 1 can of coconut water and 2 oz of coconut rum, it makes 2 servings.  Technically the rum should cost you 2 points per ounce and the rest is free, but for some reason when you put it in the recipe builder it bumps you up to 4.  Its your call on how you want to count it.

I basically spent the weekend singing "If you like Pina Coladas, blah blah blah in the rain"
It helped cheer me up, since my car just got recalled for the engine catching on fire!
Hmmm I guess I could have gone around singing "Great Balls of Fire"....

    Turkey Lurkey

I'm proud to say as of yesterday I've completed 4 successful weeks on WW.  My loss for the week was 2.4 bring me to 7 1/2 lbs lost. I'm pretty dang excited. So far I haven't felt deprived at all, I just feel like I'm more "careful" in my choices.

One major change I did was go back on my meds (metformin) to help with the insulin resistance.  The last time I took it it really made me nauseous.  I've been taking it at night and haven't had any bad feelings yet,  I did stop taking my herbs last week so my body could get used to the Met again. I think I'll start them again in December.

    Tips from this week:
    1. I've been drinking alot of mint tea.  It's calming to the stomach, helps me drink more water/feel fuller and it has no caffeine.  Plus its been cold and it makes me feel warm and fuzzy.

    2. Planning ahead.  This really helped me alot especially during the 4 day weekend.  I knew my mom was going to make our big family dinner on Saturday so I loaded my point tracker with everything I could possibly want to eat so I knew what kind of damage I was working with.  I made sure to plan my week to eat super good and save up those bonus points for turkey!  And its a good thing I did.  Sunday we went over to a friends house who made 18 point roasted potato's (she used a cup of butter)!!!

    3. Picked up my hobby, crocheting.  I had a lot of free time to graze this weekend, by keeping my hands busy with a crochet hook and working on my invitation job it kept me from popping things in my mouth.

As you saw from Thursday I did a little baking.  I also did a little freaking out.  Hubby joined WW a little earlier than expected and I wasn't mentally prepared for it.  I'm not sure why but it really made me mad that he gets 54 points and I only get 39.  I had spent all day Thurs cleaning my house, catching up on ironing, baking and cleaning up that mess and he....tinkered around in his truck.  I know I should have been grateful when he made me a tuna sandwich for lunch (maybe it was the hunger mixed with cleaning fumes) but I lost it because I didn't have control over how my tuna was made.  I already know I'm a control freak, but this brought out the worst in me.  I told him I wasn't going to let him sabotage me because he had so many more points and could eat what ever he wanted.  In the end, it was ok.  I made a turkey sandwich even though it was the same point value as what he made it was the fact of being in control.

Yesterday I felt bad, poor hubby didn't really know what to eat so he took yogurt for lunch.  I went to trader joes on my lunch break after weighing in and loaded up on protein full point friendly foods for him to make his lunch.  When I got home last night I whipped out my sharpies and wrote the point values on everything so he wouldn't have to ask.  I told him to pack his food for the day and plan for 20 pt dinners.  I hope it works out, after my melt down I realize we need to help each other and this needs to be a team effort.

This weekend I turned my alarm off.  Every morning I woke up trying to figure out what day we were on.  I got alot of things accomplished and it was nice to be with my family and friends.  Coco didn't seem to mind the turkey scraps either.

    Baked Oatmeal Thursday

Thursday seemed as good a day as any to drag out the ol' mixing bowl and bake something up for my honey.  This recipe has been floating around pinterest amongst my friends with rave reviews so I had to give it a shot myself.

You can find the original recipe here on this cute little blog.  Now I wanted to make this as WW friendly as possible so I did alot of change ups.  For instance I used egg beaters instead of eggs.  I also took out the walnuts (high fat) and banana (I'm allergic).  I also opted to use mini chips instead of regular size and added marshmallow bits.  Since I was getting in tune with my inner Martha and I don't have a apple corer I decided to use a heart shaped cookie cutter to punch out the centers of my apple.

And here is the finished product!  It was way yummy and definitely on the "make again" list.
I think after all was said and done I estimated 7 pts a serving and my family was non the wiser.

    Bon Apetit!!

    Good News and other things

So here's the dish...sorry its a day late, but I do work ya know.

First things first, I wasn't going to weigh in yesterday because of Flo and water weight, but I did and I'm glad I did.  I had a loss of 2.4 lbs.  BOO-YAH!  That made me so happy, especially because of my little loss last week and that I tried SO hard even with my 9 point coffee hehe.  We are now at a total of 5 1/2 lbs down.  I got my little *bravo star* in my book but didn't stay at the meeting for any announcements.  I'm determined to have no "gains" in my 16 week book.

Speaking of Aunt Flo, she came at day 32 this month.  Not bad.  Way better than 48 or not at all. Hopefully with the continued weight loss I'll get down to and maintain 28 days.

Here are my tips from last week:
    1. DON'T put the creamy chocolate shake mix in your coffee.  It does NOT taste like a mocha.  My team leader LIED.

    2. The best meal I cooked was grilled chicken and vegetables covered in mozzarella and a half cup of marinara for 10 points!  I now found a light provolone at target thats 1 pt.  Going to try that next.

    3. Fav Finds: Skinny Cow Mocha Truffle Bars for 3 points and WW Dark Chocolate Raspberry Ice Cream Bars for 2 points.  Got both at target.

What really helped me is tracking.  I'm trying to make it a game, see how much food you can get for the least points.  Its the first thing I do in the morning when I get to work.  I also started taking my dog Coco for short 15 minute walks.  Since it rained half of last week it was short lived, but I plan on getting back on track.  I had taken him to a dog trainer for jumping and she told me that he needed to be walked to exhaust his brain.  Works for me.

    Here is my Puppy Love.

In other news...I was with my friend on Monday night (had to pick up my lunch bag) and her Mom was there, she works with insurance, we'll call her Nana P.   A few months back neither myself or hubby had health insurance and I was calling around to get pricing on coverage.  In my quest I had been asking about infertility/pregnancy coverage and kept getting shot down.  We now have Kaiser through Hubby's work and I was afraid if we used a RE (reproductive endocronologist ie. fertility dr) that the pregnancy wouldnt be covered.  Which is partially why I was thinking in desperation to go to Mexico.  Thankfully I asked Nana P about what these insurance reps were telling me.  She explained that Independant coverage can deny you where as group coverage will cover it. She encouraged me to call Kaiser today and find out what exactly they will cover.

And thats exactly what I did (about 30 minutes ago).  In short I now know that we are not covered for fertility treatments under our current plan, but that I can see my Kaiser drs OR go to the HRC and once we do get pregnant they WILL cover the pregnancy.   This is a hugh relief.  I am a glutten for punishment/worry I guess, because I keep reading these blogs and now on the WW site there are MORE blogs about women who've gone through all this crap.  I really thought IUI was the way to go, but the more I read I'm seeing that these poor women are going for 6, 7, 8 failed treatments and eventually going to IVF anyway.  I don't want to pay for each IUI and have it end up being a waste/costing the same as 1 IVF.  I still dont know which way to go, but I'm glad I can now get this ball rolling and that I can finance it either way at the HRC.
